Dinner - Hold On To Your Bellies

Well, I certainly outdid myself this evening. The pork rested on the cutting board for 20 minutes after slow cooking for 5 1/2 hours. I shredded the pork with two forks and it fell apart to the touch. I emptied the crock pot of all juices and fat and added the BBQ sauce. I added the pork back in and let it simmer for another half hour.

The coleslaw was prepared and was rather wetter than usual. That's okay. The beans were heated up and the meal was about complete. I got out the Sara Lee corn meal dusted kaiser buns and heaped it with the mouthwatering succulent pork. The smell was incredible. Then, a heaping spoon of baked beans and coleslaw hit the deck. One bite of that sandwich sent me to hog heaven, literally! The coleslaw was a little runny, but that's okay because the juice was sopped up by the bread on the sandwich. The smoky flavor of the beans mixed with the crunchiness of the slaw played a wonderful melody of tastes and flavors in my mouth.

Yes, it was such a good meal. Who's the best mommy in the whole world?

I never cook pork roast, but I do love some pulled pork. That meal sounds soooo delicious! Of course I would read this while waiting for my chicken to marinate and thaw. (Of course I forgot to thaw the chicken earlier!) You can do both at once, right? It is almost 6pm and I am starved. It will probably be about 8 or 9 before we eat. Oh, and speaking of coleslaw, have you been to that Sabor Latin Grill in Old Town by the Warren? Mmmm, coleslaw on this heavenly cornbread that is to die for! The funny thing is that dh and I usually don't like coleslaw or cornbread that much, but this was one of the best things I've ever eaten. Dang, I gotta go find a snack or something.

Sounds so good! I've never made pulled pork. I had a veggie burrito at Baja Fresh for dinner. It was yummy.

I didn't even know the music in Momma Mia was Abba. As soon as I saw the credits, it said, duh! And I thought of you. You're going to love it!
